The Bikini Cocktail
Yields 10 servings
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Place all the ingredients inside a pot, bring to a simmer, mixing until the sugar dissolves. Then, take off the stove allowing it to cool fully. Decant into an sterilised bottle, cap it and refrigerate it chilled, it will last for around one month.
For the Cocktail Base: Mix all the liquid ingredients into a large bottle, allow it to infuse for an hour, then filter it best through muslin, so it's perfectly clear.
For serving: Pour 85ml of the batch mix to a cocktail shaker packed with ice, and agitate carefully for a minute to chill. Strain to a frosted cocktail glass or equivalent, garnish with a few cranberries and finish by giving it a brief mist of mandarin oil over the top.
